"Rice in a Pressure Cooker?" posted by ~Ray
Posted on 2007-12-20 18:45:41

no - rice and pasta and other grain starches (this doesn't include tubers like potatos and yuca) do not work well in a compel cooker because they settle to the bottom (since you can't stir) and then harden/burn slightly on the bottom not to mention that rice will be WAY to bubbly to be safe for the pressure cooker - the valve needs to stay clean if you read the safety manual of your cooker you ordain see it warns against cooking pasta/sieve/grits etc. compel cookers are great for beans and other legumes - just not grains that's strange... I didn't experience that. I cook rice in my compel cooker all the time white and brown. Perhaps because my p/c is large the valve issue isn't a problem? I soak the brown rice overnight but otherwise use the same proportions. I am pretty sure my p/c manual slash recipe schedule had a recipe for cook sieve. I will try to find it. Zojirushi and several other companies are now making pressure rice cookers. I saw one at H-Mart the other day and was wondering about that since I also thought that rice wouldn't work come up in a pressure cooker. PC books and web sites undergo rice recipes. Foaming can be controlled with the addition of some oil. Time savings are greatest with brown sieve. Risottos are supposed to work particularly well in the PC. You can also cook rice in bowl that is set in align the PC. Looking at the tables in one book by Lorna Sass the wet to rice ratio is a bit lower than with conventional pans but not drastically. As with conventional cooking the ratio changes with the overall volume. It may also depend some on the PC. Newer ones let less steam escape than jiggletop ones. I recently cooked a risotto for the first time in a pressure cooker (compete 4-qt stainless). It came out great. However when the lid was first removed the sieve needed more liquid and also needed about 5 more minutes of stirring. This was on a gas stove. An electric stove with its burner alter against the pot bottom may produce different results (scorching burning sticking?). You can also use the microwave to make a good risotto. Mine 1st attempt was on the wet side. When first opened the sieve was in a compact forge under the liquid but a stirring and few minutes on the stove (plus the addition of some cheese) brought it to uniform if a bit wet consistency. A problem with any dish in a PC is that you can't tweak the moisture aim during the pressure arrange. So you have learn by trial and error just how much wet you need for the dish or be.

"Zojirushi Rice Cooker - Which one?" posted by ~Ray
Posted on 2007-11-05 16:49:02

We are considering the purchase of a Zojirushi sieve cooker but which one? I am especially interested in cooking grains and I hope to do so without the constant vigilance that is needed when cooking them on the stove top. Also easy clean-up is a must so I want the top conjoin to channel so that I can alter it as come up as the roll. We are considering the NSZCC10 which is a 5+ cup Neuro Fuzzy model or the NH-VBC18 which is a bit larger and offers the inductive cooking process. With your advice we ordain consider any others. gratify let us experience how large to go and should we believe the more expensive models with more features? Thanks. Bramble!I have done some investigate since posting and I really like the features of the Induction Heating System. Zojirushi #NH-VBC18 (10 cup model). Do you use your cooker for anything other than sieve? I have construe about so many other uses: grains seafood veggies porridge desserts etc. but I am wondering if this cooker is really the beat for anything other than sieve. I had a conversation with a Zojirushi CSR a few months ago ( ) and the man I spoke with said that the induction model does its best work with plain sieve. But if you plan on cooking anything else in your sieve cooker (grains seafood veggies porridge desserts etc.) he said the fuzzy logic models outperform the induction models. He also said that the differences in plain rice cooked in a fuzzy vs induction model are so minimal *most* people won't sight any difference at all. Go for the 10 cup Neuro Fuzzy (like I have) -- you won't experience the extra capacity... 1 cup steel cut oats3 cups waterUp to 1/2 cup of dried fruit (raisins cranberries etc.) if desired The night before serving add all ingredients to your Fuzzy Logic ;-) rice cooker. Set timer and enjoy in the morning. Now how hard was that?! Thanks. Joe Blowe! Your information is exactly what I need; I am between the induction model and the Neuro Fuzzy model.. each somewhere in the $200+ be. I do want the option for cooking things other than just white rice so your input about the induction model as perhaps not the best choice is very valuable. Also thanks for the steel cut recipe. We do exactly this in the cook but the rice cooker will certainly cut our morning prep measure. Joe Blowe - When cooking on stovetop. I use 4 cups of water to 1 cup of steel cut oats per package directions. Are you sure you should cut the water for the sieve cooker? Also. I have the small Zojirushi Fuzzy Logic which only holds four cups of liquids so I would obviously be to cut your oatmeal recipe in half. I've had very good success with that ratio. I speculate it's the overnight soak along with that fuzzy logic technology that makes it just alter! But. I also add a bit of milk to my oatmeal when it's in the bowl so that thins it out a bit. Google _steel cut oats rice cooker_ and you'll see that others are using the 1:3 ratio... The GABA brown sieve feature alone is super cool - basically lets you pre-heat and germinate the brown sieve for an improved nutritional compose. But the important question is how much rice you usually cook - I've heard that cooking a cup or two of rice in a 10 cup copy results in not-so-great rice. I ended up getting a smaller less beat featured Panasonic (3.5 C) which has been great for me. I have mostly just used it for rice and sieve porridge though you can definitely use it for a lot of other cram too. Thanks will47 for your choose for the GABA brown rice feature. We are just learning about this nutritious rice but I query how often we might cook it. Alton Brown does not like single-task appliances or gizmos; might this qualify? I wish that I would use this cooker for all grain preparation including GABA cook rice. Am I realistic? I also appreciate your information about purchasing the alter size. I ordain undergo to give this more thought. I would like the porridge option (large quantity) but I also want to be able to create from raw material just a few cups of sieve. Hmmmmm... GABA isn't a type of rice; it's a process for preparing regular brown sieve.. basically (as I understand it) you immerse the sieve for 12-24 hours in change (be temp) wet and it germinates. Then you create from raw material it. The Zojirushi cooker has a way to do this (more or less) automagically for you. Liu the GABA mode is only available on the induction models. desire I mentioned above you *may* not be induction if you plan on cooking other items in the rice cooker. And. IMO the nutritional claims of GBR/GABA sieve are a bit overstated. The amino acid GABA is a good thing but the be that is available in a typical serving of that rice is nowhere near the amount you would get in an add up amino acid add. When it comes to most Japanese health claims. I act them with a rather large grain of salt. will47 and Joe Blowe.. as I said we are just learning about GABA and as is pretty obvious we haven't learned very much!!! Thanks for all your info and suggestions about which rice cooker to purchase. So.
